Noctem Artisans Brasseurs was founded in October 2015 in Québec City, opening first as a brewpub on Rue du Parvis before expanding into a dedicated production facility in the Saint-Malo district in 2018. Built by a founding team that entered the industry with determination rather than experience, Noctem has grown steadily through disciplined work, continuous refinement of its processes, and a strong commitment to quality. While producing a wide range of styles, the brewery is particularly recognized for its hop-forward IPAs and modern interpretations that have fueled its expansion and reputation across Québec.
